Lime and Cranberry Energy Balls
2/3 cup (80g) cranberries, dried, unsweetened
1 cup (80g) desiccated coconut
1 cup (95g) almond meal
2 tbsp. coconut oil
1 tbsp. honey
1 1/2 tsp. lime zest
1 tbsp. lime juice
Prepare all the dry ingredients needed such as dried cranberries, desiccated coconut and almond meal.
Prepare all the wet ingredients such as coconut oil and honey.
Zest the lime and get its juice.
Place the cranberries into a food processor or blender and process until finely chopped.
Add the remaining ingredients and blitz until the mixture comes together.
Roll into 12 balls.
Store the balls in an airtight container in the fridge for up to 2 weeks.
